Cashew Sauce:

  • 1/2 cup raw cashews, soaked for 2-4 hours
  • 1/4 cup water (adjust for desired consistency)
  • 1 tbsp lemon juice
  • 1 clove garlic
  • Pinch of sea salt
  • Pinch of black pepper

Sweet Chili Date Syrup:

  • 1/4 cup dates, pitted and soaked for 30 minutes
  • 1 tbsp chili powder
  • 1/4 cup water

Wraps:

  • 6-8 large lettuce leaves (e.g., romaine or butter lettuce)

Instructions:

  1. Prepare Walnut Meat:
    • Drain and rinse soaked walnuts.
    • Place walnuts in a food processor with cumin, chili powder, garlic powder, onion powder, sea salt, and black pepper.
    • Pulse until the mixture is crumbly and resembles ground meat. Adjust seasoning if needed.
  2. Prepare Cashew Sauce:
    • Drain and rinse soaked cashews.
    • Blend cashews with water, lemon juice, garlic, sea salt, and black pepper until smooth. Add more water if needed for desired consistency.
  3. Prepare Sweet Chili Date Syrup:
    • Blend soaked dates with chili powder and water until smooth.
  4. Assemble Wraps:
    • Lay out a lettuce leaf.
    • Add a spoonful of walnut meat in the center.
    • Top with julienned carrots, purple cabbage, avocado slices, and cilantro.
    • Drizzle with cashew sauce and sweet chili date syrup.
    • Fold the lettuce leaf around the filling and enjoy!
