Cashew Sauce:
- 1/2 cup raw cashews, soaked for 2-4 hours
- 1/4 cup water (adjust for desired consistency)
- 1 tbsp lemon juice
- 1 clove garlic
- Pinch of sea salt
- Pinch of black pepper
Sweet Chili Date Syrup:
- 1/4 cup dates, pitted and soaked for 30 minutes
- 1 tbsp chili powder
- 1/4 cup water
Wraps:
- 6-8 large lettuce leaves (e.g., romaine or butter lettuce)
Instructions:
- Prepare Walnut Meat:
- Drain and rinse soaked walnuts.
- Place walnuts in a food processor with cumin, chili powder, garlic powder, onion powder, sea salt, and black pepper.
- Pulse until the mixture is crumbly and resembles ground meat. Adjust seasoning if needed.
- Prepare Cashew Sauce:
- Drain and rinse soaked cashews.
- Blend cashews with water, lemon juice, garlic, sea salt, and black pepper until smooth. Add more water if needed for desired consistency.
- Prepare Sweet Chili Date Syrup:
- Blend soaked dates with chili powder and water until smooth.
- Assemble Wraps:
- Lay out a lettuce leaf.
- Add a spoonful of walnut meat in the center.
- Top with julienned carrots, purple cabbage, avocado slices, and cilantro.
- Drizzle with cashew sauce and sweet chili date syrup.
- Fold the lettuce leaf around the filling and enjoy!
