Pizza Casserole: A Low-point Delight

Instructions:
Step 1: Prepare the Cauliflower
Begin by steaming the cauliflower. Place the chopped florets in a microwave-safe bowl and add 1 cup of water. Cover the bowl with a damp paper towel to retain moisture. Microwave on high for about 3 minutes. The goal is to achieve a tender texture without making the cauliflower mushy, as it will continue cooking in the oven.
After steaming, drain any excess water and pat the cauliflower dry with a paper towel. Set it aside to cool slightly while you prepare the other ingredients.
Step 2: Cook the Italian Sausage
In a large skillet over medium-high heat, cook the Italian sausage for about 15 minutes, breaking it up as it cooks. Once fully browned, drain any excess fat and set the sausage aside. This step is crucial as it adds a depth of flavor to your casserole.
Step 3: Sauté the Mushrooms
In the same skillet, add 1 tablespoon of olive oil and sauté the chopped mushrooms for about 10 minutes. This will help to evaporate excess moisture and enhance their flavor. Once cooked, set the mushrooms aside to cool.
Step 4: Combine Ingredients
In a large mixing bowl, combine the cooked Italian sausage, sautéed mushrooms, diced green pepper, and steamed cauliflower. Stir until all the ingredients are well mixed, allowing the flavors to meld together.

Divide the cauliflower mixture in half and spread the first half evenly over the sauce. Top this layer with 6 ounces of shredded mozzarella cheese, followed by another ½ cup of marinara sauce and half of the pepperoni slices. Ensure the pepperoni is evenly distributed and slightly pressed into the mixture.
Step 6: Add Remaining Ingredients
Spread the remaining cauliflower mixture over the first layer. Top with the remaining ½ cup of marinara sauce, followed by the remaining 6 ounces of mozzarella cheese and the rest of the pepperoni slices. Save about 10 slices of pepperoni to add to the top of the casserole.
Step 7: Finish with Cheese and Seasoning
In a small bowl, combine the powdered Parmesan cheese and Italian seasoning. Sprinkle this mixture evenly over the top layer of the casserole. Finally, add the reserved pepperoni slices for an appetizing finish.
