📝 Ingredients:

  • 1/2 cup PB2 (powdered peanut butter), reconstituted with water – 1 point
  • 2 tbsp creamy peanut butter (optional, for richness) – 6 points
  • 1/4 cup unsweetened applesauce – 0 points
  • 1/4 cup zero-calorie sweetener (like monk fruit or stevia blend) – 0 points
  • 1 egg – 0 points
  • 1/2 tsp vanilla extract – 0 points
  • 1/2 cup almond flour or oat flour – 4 points
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp mini chocolate chips (Lily’s sugar-free or semi-sweet) – 3 points
  • Optional: Mini muffin liners or silicone mold

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Lightly spray or line a mini muffin tin.
  2. In a bowl, whisk together PB2, peanut butter (if using), applesauce, egg, sweetener, and vanilla.
  3. Stir in the almond flour, baking soda, and salt. Fold in the chocolate chips.
  4. Spoon the batter into 12 mini muffin cups (about 1 tablespoon each).
