Ingredients

  • 3/4 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granular sugar-free sweetener (like Lakanto Monkfruit or Splenda)
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1 large egg white
  • 2 tbsp unsweetened applesauce
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat Oven:
Set oven to 350°F (175°C). Line a baking sheet with parchment paper or spray lightly with non-stick spray.
  2. Prepare Dough:
In a medium mixing bowl, whisk together almond flour, cocoa powder, sugar-free sweetener, baking powder, and salt. In a separate small bowl, whisk the egg white, applesauce, and vanilla until smooth, then add the wet mixture to the dry ingredients, stirring until combined.
  3. Shape Cookies:
Using a tablespoon or small cookie scoop, drop the dough onto the baking sheet, spacing cookies about 1 inch apart. Gently flatten each ball with the back of the spoon to form round cookies.

Bake for 8-10 minutes, or until cookies are set around the edges but still soft in the center. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
