No-Bake Keto Peanut Butter Balls π₯π«
Ingredients:
- 1 cup creamy peanut butter (sugar-free or natural, no added sugar)
- 1/4 cup coconut flour (adjust if needed for texture)
- 1/2 cup powdered erythritol (or any keto-friendly sweetener)
- 1 tsp vanilla extract (optional)
- 1/2 cup sugar-free chocolate chips (Lily’s or ChocZero)
- 1 tbsp coconut oil (for melting chocolate)
- Pinch of salt (if your peanut butter is unsalted)
Instructions:
1. Prepare the Peanut Butter Mixture:
- In a medium bowl, mix together the peanut butter, coconut flour, powdered erythritol, vanilla extract (optional), and salt (if using). Stir until fully combined and a dough-like consistency forms.
- If the mixture is too sticky, add a little more coconut flour, 1 tablespoon at a time, until you can roll it into balls.
2. Shape the Balls:
- Roll the peanut butter mixture into small balls (about 1-inch in diameter). Place them on a baking sheet or plate lined with parchment paper.
3. Chill:
- Place the peanut butter balls in the freezer for about 20-30 minutes to firm up.
4. Melt the Chocolate:
- While the peanut butter balls are chilling, melt the sugar-free chocolate chips with the coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring in between, until smooth.
5. Coat the Peanut Butter Balls:
- Remove the peanut butter balls from the freezer. Using a fork or toothpick, dip each ball into the melted chocolate, making sure itβs fully coated. Place them back on the parchment paper.
6. Set the Coating:
- Once all the peanut butter balls are coated, place them back in the refrigerator or freezer for about 10-15 minutes, or until the chocolate is set.
7. Enjoy!:
- Once the chocolate is hardened, the peanut butter balls are ready to eat! Store any leftovers in the fridge to keep them firm.
