- Fajita Filling:
- 2 cups shredded king oyster mushrooms
- 1 large bell pepper, sliced (any color)
- 1 large onion, sliced
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon sea salt
- 1 teaspoon date sugar
- 1 teaspoon onion powder
- 1/2 teaspoon ginger powder
- 1/2 teaspoon achiote powder
- Juice of 1 key lime
- 1 tablespoon olive oil (for sautéing)
- Toppings:
- 1 avocado, smashed
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Pinch of sea salt
- To Serve:
- 8 small tortillas (corn or flour)
Instructions
- Prepare the Fajita Filling:
- Heat the olive oil in a large skillet over medium-high heat.
- Add the shredded king oyster mushrooms, bell pepper, and onion to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
- Add the cayenne pepper, sea salt, date sugar, onion powder, ginger powder, and achiote powder to the skillet. Stir well to coat the vegetables and mushrooms evenly with the spices.
- Pour the key lime juice over the mixture and cook for another 2-3 minutes until everything is well combined and heated through.
- Prepare the Toppings:
- In a small bowl, mash the avocado with a fork until smooth.
- Mix in the chopped cilantro, lime juice, and sea salt. Adjust seasoning to taste.
- Assemble the Fajitas:
- Warm the tortillas in a skillet or microwave until soft.
- Spoon the mushroom and vegetable mixture onto each tortilla.
- Top with a dollop of the smashed avocado mixture.
- Serve immediately.
