Ingredients

  • Fajita Filling:
    • 2 cups shredded king oyster mushrooms
    • 1 large bell pepper, sliced (any color)
    • 1 large onion, sliced
    • 1/2 teaspoon cayenne pepper
    • 1/2 teaspoon sea salt
    • 1 teaspoon date sugar
    • 1 teaspoon onion powder
    • 1/2 teaspoon ginger powder
    • 1/2 teaspoon achiote powder
    • Juice of 1 key lime
    • 1 tablespoon olive oil (for sautéing)
  • Toppings:
    • 1 avocado, smashed
    • 1/4 cup fresh cilantro, chopped
    • Juice of 1 lime
    • Pinch of sea salt
  • To Serve:
    • 8 small tortillas (corn or flour)

Instructions

  1. Prepare the Fajita Filling:
    • Heat the olive oil in a large skillet over medium-high heat.
    • Add the shredded king oyster mushrooms, bell pepper, and onion to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
    • Add the cayenne pepper, sea salt, date sugar, onion powder, ginger powder, and achiote powder to the skillet. Stir well to coat the vegetables and mushrooms evenly with the spices.
    • Pour the key lime juice over the mixture and cook for another 2-3 minutes until everything is well combined and heated through.
  2. Prepare the Toppings:
    • In a small bowl, mash the avocado with a fork until smooth.
    • Mix in the chopped cilantro, lime juice, and sea salt. Adjust seasoning to taste.
  3. Assemble the Fajitas:
    • Warm the tortillas in a skillet or microwave until soft.
    • Spoon the mushroom and vegetable mixture onto each tortilla.
    • Top with a dollop of the smashed avocado mixture.
    • Serve immediately.
