Low Point Traditional Old-Fashioned Pancakes
Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsweetened almond milk (or any milk of your choice)
- 1 large egg
- 1 tablespoon unsalted butter, melted
- Cooking spray
Instructions:
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg lightly, then add the unsweetened almond milk and melted unsalted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Preheat a non-stick skillet or griddle over medium heat and lightly coat it with cooking spray.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Repeat with the remaining batter, spraying the skillet with cooking spray between batches as needed.
- Serve the pancakes warm with your favorite toppings such as fresh berries, sliced bananas, sugar-free syrup, or a dollop of Greek yogurt.
