Low-Point Creamy Garlic Chicken
Ingredients:

4 boneless skinless chicken breasts
Salt and pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons olive oil
4 cloves garlic, minced
1 cup low-sodium chicken broth
1 cup fat-free half-and-half or evaporated skim milk (instead of heavy cream)
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1 tablespoon fresh parsley, chopped (optional)
1 tablespoon light butter
Instructions:
Season the Chicken:
Season both sides of the chicken breasts with salt, pepper, garlic powder, and onion powder.
Cook the Chicken:
Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
Make the Sauce:
In the same skillet, add the light butter and minced garlic. Sauté for about 1 minute, or until the garlic is fragrant.
Add the chicken broth and bring to a simmer. Scrape up any browned bits from the bottom of the skillet.
Add Cream and Cheese:
Reduce the heat to medium and stir in the fat-free half-and-half (or evaporated skim milk), Parmesan cheese, and Italian seasoning. Continue to cook, stirring frequently, until the sauce has thickened, about 5-7 minutes.
Combine Chicken and Sauce:
Return the cooked chicken breasts to the skillet, spooning the sauce over the chicken. Simmer for an additional 2-3 minutes, allowing the flavors to meld.
Garnish and Serve:
Sprinkle with fresh parsley, if desired, before serving.
