Ingredients:

  • 1 cup self-rising flour
  • 1/4 cup granulated sugar substitute (like Stevia or Monk Fruit)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 medium apple, peeled, cored, and finely diced

Optional Garnish:

  • A dusting of powdered sugar substitute
  • Thin apple slices or lemon zest for decoration


Instructions:

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).
  2. Lightly spray a 9-inch round or square baking pan with nonstick cooking spray.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together:
    • Self-rising flour
    • Sugar substitute
    • Baking powder
    • Salt

Step 3: Combine Wet Ingredients

  1. In another bowl, mix:
