Ingredients:
- 1 cup self-rising flour
- 1/4 cup granulated sugar substitute (like Stevia or Monk Fruit)
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1 large egg
- 1/2 tsp vanilla extract
- 1 medium apple, peeled, cored, and finely diced
Optional Garnish:
- A dusting of powdered sugar substitute
- Thin apple slices or lemon zest for decoration

Instructions:
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Lightly spray a 9-inch round or square baking pan with nonstick cooking spray.
