Low-Carb Copycat Cheesecake Factory Key Lime Pie
Ingredients:
For the Crust:

- 1/2 cup sour cream
- 1/4 cup fresh lime juice
- Zest of 2 limes

Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the almond flour, shredded coconut, granulated sugar substitute, and melted butter. Mix until well combined and the mixture resembles coarse crumbs.
- Press the crust mixture firmly into the bottom of a 9-inch pie dish. Bake in the preheated oven for 10-12 minutes, or until lightly golden. Remove from the oven and let it cool while you prepare the filling.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar substitute until smooth and creamy.
- Add the sour cream, lime juice, lime zest, and vanilla extract to the cream cheese mixture. Beat until well combined and smooth.
- Pour the filling over the cooled crust and spread it out evenly with a spatula.
- Bake the pie in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
- Remove the pie from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or until fully chilled and set.
