Ingredients:

For the Crust:

  • 1 1/2 cups almond flour
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup granulated sugar substitute (such as erythritol or stevia)
  • 1/4 cup melted butter

For the Filling:

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar substitute
  • 1/2 cup sour cream
  • 1/4 cup fresh lime juice
  • Zest of 2 limes
  • 1 teaspoon vanilla extract

For the Topping:

  • Whipped cream (optional)
  • Lime slices (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the almond flour, shredded coconut, granulated sugar substitute, and melted butter. Mix until well combined and the mixture resembles coarse crumbs.
  3. Press the crust mixture firmly into the bottom of a 9-inch pie dish. Bake in the preheated oven for 10-12 minutes, or until lightly golden. Remove from the oven and let it cool while you prepare the filling.
  4. In a large mixing bowl, beat the softened cream cheese and granulated sugar substitute until smooth and creamy.
  5. Add the sour cream, lime juice, lime zest, and vanilla extract to the cream cheese mixture. Beat until well combined and smooth.
  6. Pour the filling over the cooled crust and spread it out evenly with a spatula.
  7. Bake the pie in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  8. Remove the pie from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or until fully chilled and set.
  9. Once chilled, remove the pie from the refrigerator and slice into wedges.
  10. Serve each slice with a dollop of whipped cream and a lime slice, if desired.
