Low Carb Beef Nachos

Ingredients:

  • 4 low carb tortillas
  • Olive oil spray
  • 1 lb ground beef
  • ½ tsp cumin
  • ½ tsp paprika
  • 8 oz low carb salsa
  • 1 cup shredded Mexican blend cheese
  • ¼ cup sour cream
  • 2 tbs pickled jalapeños, optional
  • 2 chopped green onions, optional

Instructions:

  1. Preheat the oven to 350F (180C).
  2. Cut the tortillas into 8 wedges and place them on a baking sheet or silicone mat. Lightly spray with olive oil. Bake for 5 minutes.
  3. Flip the chips over, spray again with olive oil, and bake for an additional 5 minutes or until crispy.
  4. In a pan, brown the ground beef with cumin and paprika.
  5. Drain excess fat from the beef, then add the salsa. Bring to a boil, then simmer for 5-10 minutes.
  6. Place the tortilla chips in a large baking dish and cover with the meat sauce. Add shredded cheese and jalapeños if desired.
  7. Bake for 5 minutes or until the cheese has melted.
  8. Garnish with chopped green onions and dollops of sour cream.
  9. Serve immediately and enjoy the cheesy, meaty goodness!
