Ingredients:
- 4 low carb tortillas
- Olive oil spray
- 1 lb ground beef
- ½ tsp cumin
- ½ tsp paprika
- 8 oz low carb salsa
- 1 cup shredded Mexican blend cheese
- ¼ cup sour cream
- 2 tbs pickled jalapeños, optional
- 2 chopped green onions, optional
Instructions:
- Preheat the oven to 350F (180C).
- Cut the tortillas into 8 wedges and place them on a baking sheet or silicone mat. Lightly spray with olive oil. Bake for 5 minutes.
- Flip the chips over, spray again with olive oil, and bake for an additional 5 minutes or until crispy.
- In a pan, brown the ground beef with cumin and paprika.
- Drain excess fat from the beef, then add the salsa. Bring to a boil, then simmer for 5-10 minutes.
- Place the tortilla chips in a large baking dish and cover with the meat sauce. Add shredded cheese and jalapeños if desired.
- Bake for 5 minutes or until the cheese has melted.
- Garnish with chopped green onions and dollops of sour cream.
