Low Carb Baked Cottage Cheese Eggs

Ingredients:

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with cooking spray.
  2. In a mixing bowl, beat the eggs until well combined.
  3. Add the cottage cheese, grated Parmesan cheese, shredded cheddar cheese, chopped fresh parsley, salt, and pepper to the beaten eggs. Mix until all ingredients are evenly distributed.
  4. Pour the mixture into the prepared baking dish, spreading it out evenly.
  5. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is golden brown.
  6. Remove from the oven and let it cool for a few minutes before slicing and serving.
