  2. Minced Garlic (2 cloves): Garlic adds depth and aromatic complexity, complementing the smokiness of the kielbasa.
  3. Olive Oil (1 teaspoon): A touch of olive oil enhances the richness of the soup, creating a smooth and luxurious texture.
  4. Yellow Onion (1 small): The sweetness of yellow onions provides a balanced base flavor, adding depth to the soup.
  5. Celery (1/2 cup, finely chopped): Finely chopped celery introduces a refreshing and crunchy element, contributing to the soup’s overall texture.
  6. Carrots (2 large, peeled and cubed): Carrots bring a natural sweetness and vibrant color, enhancing both visual appeal and taste.
  7. Chicken Broth (4 cups): A foundation of rich chicken broth forms the base of the soup, providing a savory backdrop for the other ingredients.
  8. Potatoes (1 pound, cubed): Cubed potatoes add heartiness to the soup, creating a satisfying and comforting element.
  9. Parmesan Cheese (1/4 cup, grated): Grated parmesan infuses a subtle umami flavor, elevating the overall richness of the soup.
  10. Milk (2 cups): The addition of milk contributes a creamy and luscious texture, ensuring a velvety mouthfeel.
  11. Cheddar Cheese (2 cups, grated): Grated cheddar cheese introduces a sharp and melty element, enhancing the overall flavor profile.
  12. Parsley (1/4 cup, coarsely chopped): Coarsely chopped parsley provides a fresh and herbaceous finish, brightening up the soup.
  13. Salt & Pepper (to taste): Seasoning with salt and pepper allows you to tailor the soup’s flavor to your preference.

Instructions:

Step 1 – Sautéing Kielbasa: In a Dutch oven or soup pot, heat olive oil over medium-high heat. Add sliced kielbasa and cook for 5 to 6 minutes until beautifully browned. Once done, set the kielbasa aside.

Step 2 – Vegetable Infusion: In the same pot, add minced garlic, onions, carrots, and celery. Sauté for 2 minutes, allowing the vegetables to absorb the savory remnants of the kielbasa.

Step 3 – Potato Harmony: Introduce chicken broth and cubed potatoes to the pot. Bring the mixture to a boil, then reduce the heat to low, covering and cooking for a delightful 15 minutes until the potatoes are tender.

Step 4 – Cheese and Creamy Bliss: Reintroduce the sautéed kielbasa to the pot and add milk, grated parmesan, and cheddar cheese. Season with salt and pepper, allowing the cheese to melt and infuse its richness. Cook for an additional 10 minutes over medium-low heat.

Step 5 – Garnish and Serve: Once the cheese has melded into a creamy symphony, remove from heat. Garnish the soup with coarsely chopped parsley, adding a final touch of freshness. Serve immediately and savor the comforting embrace of Smoked Kielbasa and Potato Soup.

Additional Tips:

  • Kielbasa Selection: Opt for a high-quality smoked kielbasa to maximize the smoky flavor profile of the soup.
