  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup Kalamata olives, chopped (optional)
  • 1/2 cup cherry tomatoes, halved (optional)
  • Salt and pepper, to taste

For the Tzatziki Sauce:

  • 1 cup full-fat Greek yogurt
  • 1/2 cup cucumber, grated and excess water squeezed out
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill, chopped
  • 1 tsp fresh mint, chopped (optional)
  • Salt and pepper, to taste

Instructions

Step 1: Prepare the Tzatziki Sauce

  1. In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, chopped dill, and mint (if using).
  2. Mix well and season with salt and pepper to taste.
  3. Cover and refrigerate for at least 15 minutes to allow the flavors to meld.

Step 2: Prepare the Chicken Salad

  1. In a large bowl, combine the shredded or diced chicken, finely diced cucumber, red onion, fresh dill, parsley, and Kalamata olives (if using).
  2. Add the halved cherry tomatoes (if using) and gently toss to combine.

Step 3: Assemble the Tzatziki Chicken Salad

  1. Add the prepared tzatziki sauce to the chicken salad mixture.
  2. Gently fold the sauce into the chicken salad until everything is evenly coated.
  3. Taste and adjust seasoning with additional salt and pepper if needed.

Step 4: Serve

  1. Serve the Tzatziki Chicken Salad on a bed of fresh greens like romaine or arugula for a refreshing salad.
  2. For a filling snack or lunch on the go, scoop some salad onto warm keto-friendly pita bread or roll it into a low-carb wrap.
  3. For an elegant and crisp low-carb appetizer, fill endive cups with the salad.

Notes:

  • Chicken: Use pre-cooked chicken to save time, or cook chicken breasts and shred them for the salad.
  • Greek Yogurt: Ensure you use full-fat Greek yogurt to keep the recipe keto-friendly.
  • Cucumber: Removing excess water from the grated cucumber prevents the sauce from becoming watery.
