Keto Tzatziki Chicken Salad

Ingredients
For the Chicken Salad:
- 2 cups cooked chicken, shredded or diced (rotisserie chicken works well)
- 1 cup cucumber, finely diced (peeled and seeds removed)
- 1/4 cup red onion, finely diced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup Kalamata olives, chopped (optional)
- 1/2 cup cherry tomatoes, halved (optional)
- Salt and pepper, to taste
For the Tzatziki Sauce:
- 1 cup full-fat Greek yogurt
- 1/2 cup cucumber, grated and excess water squeezed out
- 2 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tbsp olive oil
- 1 tbsp fresh dill, chopped
- 1 tsp fresh mint, chopped (optional)
- Salt and pepper, to taste
Instructions
Step 1: Prepare the Tzatziki Sauce
- In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, chopped dill, and mint (if using).
- Mix well and season with salt and pepper to taste.
- Cover and refrigerate for at least 15 minutes to allow the flavors to meld.

- In a large bowl, combine the shredded or diced chicken, finely diced cucumber, red onion, fresh dill, parsley, and Kalamata olives (if using).
