Ingredients:

  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup powdered erythritol or your favorite keto sweetener
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup unsweetened almond milk
  • 2 large egg yolks
  • 1/4 tsp xanthan gum (optional, for creamier texture)
  • A pinch of salt

Instructions:

  1. Prepare the Strawberries:
    • In a blender or food processor, puree the strawberries until smooth. Set aside.
  2. Make the Ice Cream Base:
    • In a medium saucepan, combine the heavy whipping cream and almond milk. Heat over medium heat until the mixture is hot but not boiling.
  3. Temper the Egg Yolks:
    • In a separate bowl, whisk together the egg yolks and powdered erythritol until well combined.
    • Slowly pour about 1/2 cup of the hot cream mixture into the egg yolk mixture, whisking constantly to temper the eggs.
    • Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture, whisking constantly.
  4. Cook the Mixture:
    • Cook the mixture over medium heat, stirring constantly, until it thickens slightly and coats the back of a spoon (about 5-7 minutes). Do not let it boil.
  5. Combine and Cool:
    • Remove the saucepan from the heat and stir in the strawberry puree, vanilla extract, xanthan gum (if using), and a pinch of salt.
    • Let the mixture cool to room temperature, then cover and refrigerate for at least 2 hours or until thoroughly chilled.
  6. Churn the Ice Cream:
    • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  7. Freeze:
