Keto Strawberry Ice Cream
Ingredients:
- 1 cup fresh strawberries, hulled and sliced
- 1/4 cup powdered erythritol or your favorite keto sweetener
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1 cup unsweetened almond milk
- 2 large egg yolks
- 1/4 tsp xanthan gum (optional, for creamier texture)
- A pinch of salt
Instructions:
- Prepare the Strawberries:
- In a blender or food processor, puree the strawberries until smooth. Set aside.
- Make the Ice Cream Base:
- In a medium saucepan, combine the heavy whipping cream and almond milk. Heat over medium heat until the mixture is hot but not boiling.
- Temper the Egg Yolks:
- In a separate bowl, whisk together the egg yolks and powdered erythritol until well combined.
- Slowly pour about 1/2 cup of the hot cream mixture into the egg yolk mixture, whisking constantly to temper the eggs.
- Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture, whisking constantly.
- Cook the Mixture:
- Cook the mixture over medium heat, stirring constantly, until it thickens slightly and coats the back of a spoon (about 5-7 minutes). Do not let it boil.
- Combine and Cool:
- Remove the saucepan from the heat and stir in the strawberry puree, vanilla extract, xanthan gum (if using), and a pinch of salt.
- Let the mixture cool to room temperature, then cover and refrigerate for at least 2 hours or until thoroughly chilled.
- Churn the Ice Cream:
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Freeze:
- Transfer the churned ice cream to an airtight container and freeze for at least 2 hours or until firm.
