Ingredients:

  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 jalapeño, seeds removed and finely chopped
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 cup cauliflower rice
  • 1/2 cup heavy cream
  • 1 cup shredded Monterey Jack or cheddar cheese
  • Fresh cilantro, chopped (for garnish)
  • Avocado slices (for garnish)

Instructions:

  1. Cook and Shred Chicken: Cook the chicken breasts and shred them using two forks.
  2. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add diced onion, minced garlic, diced bell pepper, and chopped jalapeño. Sauté until the vegetables are softened.
  3. Add Tomatoes and Broth: Pour in the diced tomatoes with green chilies (undrained) and chicken broth. Stir to combine.
  4. Season: Add ground cumin, chili powder, smoked paprika, dried oregano, salt, and black pepper. Stir well.
  5. Simmer: Bring the soup to a simmer, then add the shredded chicken and cauliflower rice. Simmer for about 10-15 minutes until the cauliflower rice is tender.
  6. Add Heavy Cream: Pour in the heavy cream and stir to combine. Adjust the seasoning if needed.
  7. Melt Cheese: Add shredded Monterey Jack or cheddar cheese to the soup. Stir until the cheese is melted and the soup is creamy.
  8. Serve: Ladle the Keto Southwest Chicken Soup into bowls. Garnish with chopped cilantro and avocado slices.

Notes:

  • Spice Level: Adjust the spice level by adding more or less jalapeño and adjusting the amount of chili powder to your taste.
  • Cauliflower Rice: You can use store-bought cauliflower rice or make your own by pulsing cauliflower florets in a food processor until they resemble rice.
