Ingredients:
- 8 large eggs
- 1/2 cup heavy cream
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup chopped salami or pepperoni
- 1/4 cup chopped green onions
- 1/4 cup grated Parmesan cheese (optional, for topping)
- Cooking spray or butter for greasing the muffin tin
Instructions:
- Preheat your oven to 375°F (190°C).
- Grease a muffin tin with cooking spray or butter.
- In a bowl, whisk together the eggs and heavy cream. Season with salt and pepper to taste.
- Stir in the shredded cheddar cheese, chopped salami or pepperoni, and chopped green onions. Mix until well combined.
- Pour the egg mixture evenly into the muffin tin, filling each cup about two-thirds full.
- Optional: Sprinkle grated Parmesan cheese on top of each frittata for an extra cheesy crust.
- Bake in the preheated oven for 15-20 minutes or until the frittatas are set in the center and slightly golden on top.
- Remove from the oven and let them cool for a few minutes.
- Use a butter knife to loosen the edges of each frittata and remove them from the muffin tin.
