Ingredients:

  • 8 large eggs
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped salami or pepperoni
  • 1/4 cup chopped green onions
  • 1/4 cup grated Parmesan cheese (optional, for topping)
  • Cooking spray or butter for greasing the muffin tin

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin with cooking spray or butter.
  3. In a bowl, whisk together the eggs and heavy cream. Season with salt and pepper to taste.
  4. Stir in the shredded cheddar cheese, chopped salami or pepperoni, and chopped green onions. Mix until well combined.
  5. Pour the egg mixture evenly into the muffin tin, filling each cup about two-thirds full.
  6. Optional: Sprinkle grated Parmesan cheese on top of each frittata for an extra cheesy crust.
  7. Bake in the preheated oven for 15-20 minutes or until the frittatas are set in the center and slightly golden on top.
  8. Remove from the oven and let them cool for a few minutes.
  9. Use a butter knife to loosen the edges of each frittata and remove them from the muffin tin.
