Ingredients:-
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 tablespoon fresh basil, chopped
- Salt and pepper to taste
Instructions:-
- Prepare Filling:
- In a bowl, mix together ricotta, mozzarella, Parmesan, minced garlic, and chopped basil.
- Season with salt and pepper to taste.
Assembling and Cooking:-
- Roll Out Dough:
- Divide the chilled dough into two portions.
- Roll out each portion between two sheets of parchment paper until it’s thin, but not too thin to tear.
- Place Filling:
- Spoon small portions of the filling onto one of the rolled-out dough sheets, leaving space between each.
- Top with Second Sheet:
- Carefully place the second sheet of rolled-out dough on top of the filling.
- Seal and Cut:
- Press the edges of the dough together to seal the ravioli. Use a knife or a ravioli cutter to cut out individual ravioli.
- Cook Ravioli:
- Bring a pot of salted water to a gentle simmer.
- Carefully drop the ravioli into the simmering water and cook for 3-5 minutes or until they float to the surface.
- Serve:
- Remove the ravioli with a slotted spoon and serve with your favorite low-carb sauce or simply toss them in olive oil and sprinkle with more Parmesan….
