Keto Pumpkin Pie Recipe
Ingredients:

  • 1 ½ cups almond flour
  • 3 tbsp coconut flour
  • ¼ cup unsalted butter, melted
  • 1 tbsp powdered erythritol (or preferred keto sweetener)

  • 1 cup pumpkin puree (unsweetened)
  • 2 large eggs
  • ¾ cup heavy cream
  • ½ cup granulated erythritol (or preferred keto sweetener)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ⅛ tsp ground cloves
  • ⅛ tsp salt

Instructions:

1. Preheat Oven:

  • Preheat your oven to 350°F (175°C).

2. Make the Crust:

  • In a bowl, mix together almond flour, coconut flour, melted butter, powdered erythritol, and salt until the mixture resembles coarse crumbs.
  • Press the crust mixture evenly into the bottom and sides of a 9-inch pie pan.
  • Bake the crust for 10 minutes until lightly golden. Remove from the oven and set aside to cool.

3. Prepare the Filling:

  • In a large bowl, whisk together the pumpkin puree, eggs, heavy cream, granulated erythritol, vanilla extract, cinnamon, ginger, nutmeg, cloves, and salt until smooth.

4. Assemble and Bake:

  • Pour the filling into the pre-baked crust and smooth out the top.
  • Bake for 40-50 minutes, or until the center is just set (a slight jiggle is okay).
  • If the crust begins to brown too quickly, cover the edges with foil to prevent over-browning.

5. Cool and Serve:

  • Let the pie cool to room temperature, then refrigerate for at least 2 hours to allow it to fully set.
