Keto Pumpkin Pie Recipe
Ingredients:
Crust:
- 1 ½ cups almond flour
- 3 tbsp coconut flour
- ¼ cup unsalted butter, melted
- 1 tbsp powdered erythritol (or preferred keto sweetener)

Filling:
- 1 cup pumpkin puree (unsweetened)
- 2 large eggs
- ¾ cup heavy cream

- ½ tsp ground ginger
- ¼ tsp ground nutmeg
- ⅛ tsp ground cloves
- ⅛ tsp salt
Instructions:
1. Preheat Oven:
- Preheat your oven to 350°F (175°C).
2. Make the Crust:
- In a bowl, mix together almond flour, coconut flour, melted butter, powdered erythritol, and salt until the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the bottom and sides of a 9-inch pie pan.
- Bake the crust for 10 minutes until lightly golden. Remove from the oven and set aside to cool.
3. Prepare the Filling:
- In a large bowl, whisk together the pumpkin puree, eggs, heavy cream, granulated erythritol, vanilla extract, cinnamon, ginger, nutmeg, cloves, and salt until smooth.
4. Assemble and Bake:
- Pour the filling into the pre-baked crust and smooth out the top.
- Bake for 40-50 minutes, or until the center is just set (a slight jiggle is okay).
- If the crust begins to brown too quickly, cover the edges with foil to prevent over-browning.
5. Cool and Serve:
- Let the pie cool to room temperature, then refrigerate for at least 2 hours to allow it to fully set.
- Serve chilled, optionally topped with keto whipped cream.
