- Crust:

- 1 teaspoon cinnamon
- Filling:
- 1 can (15 oz) pumpkin puree
- 2 large eggs
- 3/4 cup heavy cream
- 1/2 cup granulated erythritol or sweetener of choice
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons pumpkin pie spice
Instructions:
- Preheat your oven to 350°F (175°C).
- Prepare the Crust:
- Mix almond flour, melted butter, sweetener, and cinnamon in a bowl until it forms a dough-like consistency.
- Press the dough into a pie dish, covering the bottom and sides evenly.
- Bake the Crust:
- Place the crust in the preheated oven and bake for 10-12 minutes or until it’s slightly golden. Remove and set aside.
- Make the Filling:
- In a mixing bowl, whisk together the pumpkin puree, eggs, heavy cream, sweetener, vanilla extract, and pumpkin pie spice until well combined.
- Assemble and Bake:
- Pour the pumpkin mixture into the pre-baked crust.
- Place the pie in the oven and bake for 45-50 minutes or until the center is set.
- Chill and Serve:
