  • Filling:
    • 1 can (15 oz) pumpkin puree
    • 2 large eggs
    • 3/4 cup heavy cream
    • 1/2 cup granulated erythritol or sweetener of choice
    • 1 teaspoon vanilla extract
    • 1 1/2 teaspoons pumpkin pie spice

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the Crust:
    • Mix almond flour, melted butter, sweetener, and cinnamon in a bowl until it forms a dough-like consistency.
    • Press the dough into a pie dish, covering the bottom and sides evenly.
  3. Bake the Crust:
    • Place the crust in the preheated oven and bake for 10-12 minutes or until it’s slightly golden. Remove and set aside.
  4. Make the Filling:
    • In a mixing bowl, whisk together the pumpkin puree, eggs, heavy cream, sweetener, vanilla extract, and pumpkin pie spice until well combined.
  5. Assemble and Bake:
    • Pour the pumpkin mixture into the pre-baked crust.
    • Place the pie in the oven and bake for 45-50 minutes or until the center is set.
