Instead of tortillas, we layer garlicky sautéed spinach with creamy feta, gooey mozzarella, and a burst of flavor from sun-dried tomatoes—all crisped up to golden perfection in a skillet.
It’s everything you love about a Mediterranean quesadilla, minus the carbs and grains. Serve it as a light lunch, dinner, or snack—delicious with a side of tzatziki or a dollop of full-fat Greek yogurt.
🛒 Ingredients (Serves 2–3)
- ½ lb (8 oz) baby spinach
- 1 clove garlic, minced
- ¼ tsp ground nutmeg
- 1 tbsp olive oil
- ½ cup crumbled feta cheese
- ½ cup shredded mozzarella (or part-skim, whole milk cheese)
- 1 tbsp chopped sun-dried tomatoes (optional, for extra flavor)
- Salt and black pepper, to taste
🔥 Instructions
1. Sauté the Spinach
In a large skillet, heat olive oil over medium heat.
Add garlic and sauté for 30 seconds until fragrant.
Add the spinach and cook until wilted (2–3 minutes).
Season with nutmeg, salt, and black pepper. Remove from heat and let cool slightly.
2. Assemble the Cheese Melt (Tortilla-Free)
On a clean skillet or nonstick pan, spoon a small round pile of mozzarella in the center and flatten slightly. Let it melt and form a “cheese crust” base (1–2 minutes).
Top with the spinach mixture, crumbled feta, and optional sun-dried tomatoes.
Sprinkle a bit more mozzarella on top to act as the top layer “seal.”
3. Crisp and Flip
Once the bottom cheese crust is golden and crisp, carefully flip using a wide spatula. Cook the other side until both sides are golden and the cheese is fully melted.
4. Serve & Enjoy
Cut into wedges or serve whole. Great with a side of Greek yogurt, tzatziki, or olive tapenade.
