- 1 pound ground beef (or any preferred keto-friendly ground meat)
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 large zucchinis, halved lengthwise and seeded
- 1 cup marinara sauce (look for a low-carb option or make your own)
- 1 cup shredded mozzarella cheese
- Chopped fresh parsley for garnish (optional)

- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the ground beef, almond flour, grated Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Hollow out the center of each zucchini half to create a “boat” shape.
- Stuff each zucchini boat with the meatball mixture, pressing it firmly into the cavity.
- Place the stuffed zucchini boats in a baking dish.
- Spoon marinara sauce over the meatball-filled zucchinis.
- Sprinkle shredded mozzarella cheese over the top of each boat.
- Cover the baking dish with foil and bake in the preheated oven for about 25-30 minutes or until the meatballs are cooked through and the zucchinis are tender.
- Optionally, remove the foil and broil for an additional 2-3 minutes to brown the cheese.
- Garnish with chopped fresh parsley if desired and serve hot.
