Ingredients:

    • 1/2 cup water

  • For the Topping:
    • 2 cups shredded Mexican cheese (or cheddar cheese)

    • Sliced black olives
    • Chopped iceberg lettuce
    • Chopped tomatoes (optional for strict keto)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C) and spray an 8-inch springform pan with nonstick spray.
  2. Prepare the Beef Filling:
    • In a large skillet over medium heat, brown the ground beef. Drain excess fat if needed.
    • Add the low-carb refried beans (or see alternative below), taco seasoning, and water to the skillet. Simmer until most of the liquid has absorbed, about 5 minutes.
    Alternative for Refried Beans:
    For a lower-carb alternative, omit the refried beans and add 1 cup of sautéed riced cauliflower to the beef mixture instead.
  3. Assemble the Pie:
    • Place one low-carb tortilla in the bottom of the prepared springform pan. Spread 1/5 of the beef mixture evenly over the tortilla and top with 1/4 cup of the shredded cheese.
    • Repeat the layers, ending with a tortilla on top. Sprinkle the remaining cheese over the top.
  4. Bake:
    • Bake in the preheated oven for 20 minutes or until the cheese is melted and golden brown.
  5. Cool and Serve:
    • Let the taco pie cool for 5 minutes before slicing and serving. Top with sour cream, sliced black olives, chopped lettuce, and tomatoes if desired.
