Ingredients:

Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C) and spray an 8-inch springform pan with nonstick spray.
- Prepare the Beef Filling:
- In a large skillet over medium heat, brown the ground beef. Drain excess fat if needed.
- Add the low-carb refried beans (or see alternative below), taco seasoning, and water to the skillet. Simmer until most of the liquid has absorbed, about 5 minutes.
For a lower-carb alternative, omit the refried beans and add 1 cup of sautéed riced cauliflower to the beef mixture instead. - Assemble the Pie:
- Place one low-carb tortilla in the bottom of the prepared springform pan. Spread 1/5 of the beef mixture evenly over the tortilla and top with 1/4 cup of the shredded cheese.
- Repeat the layers, ending with a tortilla on top. Sprinkle the remaining cheese over the top.
- Bake:
- Bake in the preheated oven for 20 minutes or until the cheese is melted and golden brown.
- Cool and Serve:
- Let the taco pie cool for 5 minutes before slicing and serving. Top with sour cream, sliced black olives, chopped lettuce, and tomatoes if desired.
