Ingredients:
- 3 cups Mozzarella cheese (shredded)
- 2 tbsp Full-fat Greek yogurt
- 2 large Eggs
- 1 ½ cups Blanched almond flour
- 1 tbsp Baking powder
- 2 tbsp Unsalted butter (melted)
- ½ tsp Garlic powder
- 1 tbsp Fresh parsley (chopped)
Instructions:
- Preheat the Oven: Set the oven to 375°F (191°C) and line an extra-large baking sheet with parchment paper.
- Melt Cheese and Yogurt: Combine the mozzarella and Greek yogurt in a large bowl. Microwave for 2-3 minutes, stirring every 30 seconds until smooth. Stir again until fully incorporated. (You can also melt the cheese mixture over a double boiler.)
- Prepare Dry Ingredients: In a medium bowl, mix the almond flour, baking powder, and eggs.
- Combine Mixtures: While the cheese is still hot, quickly combine the dry mixture with the cheese. Knead until a dough forms. If the dough is sticky, chill for 15 minutes until it’s cool enough to work with.
- Shape the Dough: Divide the dough into 6 sections. Roll each section into a ball, then flatten into a naan shape (about ¼ inch thick).
- Bake the Naan: Bake for 8-11 minutes until lightly golden with a few spots of browning. Pop any bubbles that form.
- Add Garlic Butter: While baking, mix the melted butter, garlic powder, and fresh parsley. Brush the naan with the mixture and return to the oven for 2 more minutes.
