Keto Garlic Naan Recipe
Ingredients:

  • 3 cups Mozzarella cheese (shredded)
  • 2 tbsp Full-fat Greek yogurt
  • 2 large Eggs
  • 1 ½ cups Blanched almond flour
  • 1 tbsp Baking powder
  • 2 tbsp Unsalted butter (melted)
  • ½ tsp Garlic powder
  • 1 tbsp Fresh parsley (chopped)

Instructions:

  1. Preheat the Oven: Set the oven to 375°F (191°C) and line an extra-large baking sheet with parchment paper.
  2. Melt Cheese and Yogurt: Combine the mozzarella and Greek yogurt in a large bowl. Microwave for 2-3 minutes, stirring every 30 seconds until smooth. Stir again until fully incorporated. (You can also melt the cheese mixture over a double boiler.)
  3. Prepare Dry Ingredients: In a medium bowl, mix the almond flour, baking powder, and eggs.
  4. Combine Mixtures: While the cheese is still hot, quickly combine the dry mixture with the cheese. Knead until a dough forms. If the dough is sticky, chill for 15 minutes until it’s cool enough to work with.
  5. Shape the Dough: Divide the dough into 6 sections. Roll each section into a ball, then flatten into a naan shape (about ¼ inch thick).
  6. Bake the Naan: Bake for 8-11 minutes until lightly golden with a few spots of browning. Pop any bubbles that form.
  7. Add Garlic Butter: While baking, mix the melted butter, garlic powder, and fresh parsley. Brush the naan with the mixture and return to the oven for 2 more minutes.
  8. Serve: Remove from the oven and enjoy!

Keto Tips:

  1. Cheese Quality: Use high-quality mozzarella cheese, as it is a key ingredient in this recipe. Avoid pre-shredded mozzarella, which often contains starches that add hidden carbs.
  2. Almond Flour Substitute: If almond flour is unavailable or you prefer fewer carbs, crushed pork rinds can also work, though it will slightly alter the texture.
  3. Work Quickly: Combine the cheese mixture with the almond flour mixture while the cheese is still hot, as it helps the dough form better.
  4. Chill if Sticky: If the dough is too sticky, don’t hesitate to chill it in the fridge for a few minutes, making it easier to handle.
