Keto Cucumber Sandwiches
Ingredients:

  • 4 slices of keto bread (store-bought or homemade — usually 1–2g net carbs per slice)
  • 4 oz (115g) full-fat cream cheese, softened
  • 2 tbsp mayonnaise (sugar-free, keto-friendly)
  • 1 tsp lemon juice
  • 1/2 tsp garlic powder
  • 1 tsp dried dill or 1 tbsp fresh chopped dill
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 large English cucumber, thinly sliced

👩‍🍳 Instructions:

  1. Make the spread:
    • In a bowl, mix cream cheese, mayo, lemon juice, garlic powder, dill, salt, and pepper until smooth and creamy.
  2. Prep the bread:
    • Lightly toast the keto bread if you prefer more texture (optional).
    • Let it cool if toasted.
  3. Assemble the sandwiches:
    • Spread the cream cheese mixture generously on each slice of bread.
    • Layer thin cucumber slices over the cream cheese on half of the bread slices.
    • Top with the remaining bread to form sandwiches.
  4. Cut and serve:
    • Trim crusts if desired.
    • Cut into quarters (squares or triangles) for tea sandwich style.
    • Garnish with extra dill or everything bagel seasoning if serving on a platter.
