Ingredients:
•1T butter, melted and cooled
•3T almond flour
•1T sugar-free sweetener (such as Swerve or Monk Fruit)
•1 large egg yolk
•1/8tsp vanilla extract
•a pinch of salt
•1T sugar-free chocolate chips (such as Lily’s)

Instructions:


  1. In a microwave-safe mug, whisk together the butter, almond flour, sweetener, egg yolk, vanilla, and salt until well combined.

  2. Stir in the chocolate chips and spread the batter evenly in the mug.

  3. Microwave for 45 to 60 seconds or until the cookie is set around the edges but still soft in the center.

  4. Let it cool slightly and enjoy!
