Keto Chicken Stroganoff
Ingredients:
2 boneless, skinless chicken breasts (about 1 lb)
1/4 cup almond flour (for dredging)
3 tablespoons olive oil
1 tablespoon butter
8 oz cremini mushrooms, sliced
1 small yellow onion, chopped (or 1/2 small onion for fewer carbs)
1 teaspoon dry mustard
1 tablespoon Worcestershire sauce (check for sugar-free or low-carb options)
2-3 cloves garlic, minced
1 cup chicken broth (preferably low-sodium and no added sugar)
1/2 cup sour cream (use full-fat for keto)
Kosher salt and freshly ground black pepper, to taste
Cauliflower rice or spiralized zucchini, for serving (instead of egg noodles)
Preparation:
Prepare Chicken:
Cut the chicken into 1-inch pieces. Season liberally with salt and pepper, then toss in the almond flour.
Cook Chicken:
Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Working in batches if necessary, cook the chicken until lightly browned on both sides, about 3 minutes per side. Remove the chicken to a plate and set aside.
If needed, add the remaining tablespoon of olive oil to the pan before cooking the second batch.

Cook Vegetables:
Add butter to the same pan, then add mushrooms and onions. Cook until the mushrooms release their liquid and it cooks off, about 6-8 minutes.
Add Flavorings:
Stir in the dry mustard, Worcestershire sauce, and garlic. Cook for 1 minute.
Add Broth:
Pour in the chicken broth, scraping up any browned bits from the bottom of the pan with a wooden spoon.
Simmer:
Return the chicken to the pan and let it simmer for a few minutes, stirring occasionally.
Finish Sauce:
Reduce the heat to low and stir in the sour cream. Season with additional salt and pepper to taste.
Serve:
Serve the stroganoff over cauliflower rice or spiralized zucchini instead of egg noodles. Enjoy!
