Keto Cheesy Zucchini Pie

Ingredients:
For the Crust:
1 1/2 cups almond flour
1/4 cup coconut flour
1/4 cup unsalted butter, melted
1 large egg
1/2 teaspoon baking powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
For the Filling:
1/4 cup olive oil
1 small yellow onion, diced
2 lbs zucchini (about 4 medium), thinly sliced
3 cloves garlic, minced
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
4 large eggs
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Kosher salt and freshly ground black pepper, to taste
Instructions:

Prepare the Crust:
Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking pan with nonstick spray.
In a large bowl, combine almond flour, coconut flour, melted butter, egg, baking powder, garlic powder, onion powder, and salt. Mix until a dough forms.


Press the dough into the bottom and up the sides of the prepared baking pan to form an even layer.
Bake for 10 minutes until slightly set, then remove from the oven and set aside.
Prepare the Filling:
In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and cook until softened, about 3 minutes.
Add the sliced zucchini and minced garlic to the skillet and cook until the zucchini is semi-soft, about 3 minutes more.
Season with dried basil, dried thyme, salt, and pepper. Remove from heat.
Combine and Bake:
In a large bowl, whisk together the eggs, Parmesan cheese, and mozzarella cheese. Season with salt and pepper to taste.
Add the zucchini mixture to the egg and cheese mixture and stir to combine.
Pour the mixture into the almond flour crust-lined baking dish.
Bake in the preheated oven for 35-45 minutes, or until the center is set and the top is golden brown.
Rest and Serve:
Allow the pie to rest for 15 minutes before slicing and serving.
