Ingredients:

- 1 1/2 cups almond flour

- 1/4 teaspoon dried thyme
- 4 large eggs
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Kosher salt and freshly ground black pepper, to taste
Instructions:
- Prepare the Crust:
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking pan with nonstick spray.
- In a large bowl, combine almond flour, coconut flour, melted butter, egg, baking powder, garlic powder, onion powder, and salt. Mix until a dough forms.
- Press the dough into the bottom and up the sides of the prepared baking pan to form an even layer.
- Bake for 10 minutes until slightly set, then remove from the oven and set aside.
- Prepare the Filling:
- In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and cook until softened, about 3 minutes.
- Add the sliced zucchini and minced garlic to the skillet and cook until the zucchini is semi-soft, about 3 minutes more.
- Season with dried basil, dried thyme, salt, and pepper. Remove from heat.
- Combine and Bake:
- In a large bowl, whisk together the eggs, Parmesan cheese, and mozzarella cheese. Season with salt and pepper to taste.
- Add the zucchini mixture to the egg and cheese mixture and stir to combine.
- Pour the mixture into the almond flour crust-lined baking dish.
- Bake in the preheated oven for 35-45 minutes, or until the center is set and the top is golden brown.
- Rest and Serve:
- Allow the pie to rest for 15 minutes before slicing and serving.
