Keto Butter Cookies
Ingredients:
3/4 cup butter, room temperature
1/2 cup powdered erythritol
2 1/4 cups almond flour
Optional: raw or coarse granulated erythritol, for coating
Directions:
Cream butter and erythritol together in a large bowl. Then add almond flour and mix until you get a crumbly consistency.
Transfer the dough to your kitchen counter and knead it into a smooth ball.
Sprinkle some erythritol on a piece of parchment paper, then roll the dough into a cylinder shape on top.
Wrap the dough with plastic wrap and chill in the refrigerator for 30 minutes.
Cut the dough into 1 cm slices.
Place the cookies on a baking sheet and bake at 320 degrees F for 20 minutes.
