Instructions

  1. Prepare the Chicken:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
    • In a small bowl, beat the egg and set aside. In a separate bowl, mix the almond flour, Parmesan cheese, salt, and pepper.
    • Dip each chicken cube in the egg, then coat it in the almond flour and Parmesan mixture. Place the coated chicken pieces on the baking sheet.
  2. Bake the Chicken:
    • Bake the chicken for 15–20 minutes, turning halfway, until golden and cooked through.
  3. Make the Sweet and Sour Sauce:
    • While the chicken bakes, combine the sugar-free ketchup, apple cider vinegar, soy sauce, erythritol, garlic powder, and ginger powder in a small saucepan. Bring to a low simmer.
    • In a small bowl, whisk together the xanthan gum and water, then slowly pour it into the sauce, stirring constantly, until the sauce thickens.
  4. Coat the Chicken:
    • Remove the baked chicken from the oven and transfer it to a large mixing bowl. Pour the sweet and sour sauce over the chicken and toss to coat.
  5. Serve:
    • Garnish with chopped green onions and sesame seeds if desired. Serve warm with cauliflower rice or steamed veggies for a complete meal.
