
Grilled Vegan Chickpea Burgers with Avocado Salsa
Ingredients:
For the Vegan Chickpea Burgers:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup rolled oats
- 1/4 cup chopped fresh parsley
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water (as a binder)
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- Olive oil for grilling
For the Avocado Salsa:
- 1 ripe avocado, diced
- 1 small tomato, diced
- 1/4 cup diced red onion
- Juice of 1 lime
- Salt and pepper, to taste
Instructions:
- Preheat your grill to medium-high heat.
- In a food processor, combine chickpeas, rolled oats, parsley, red onion, garlic, ground flaxseed mixture, cumin, paprika, salt, and pepper. Pulse until well combined but still slightly chunky.
- Divide the chickpea mixture into 4 equal portions and shape each portion into a patty.
- Lightly brush each chickpea patty with olive oil.
- Place the patties on the grill and cook for about 5-6 minutes on each side, or until golden brown and grill marks appear.
- While the patties are grilling, prepare the avocado salsa. In a bowl, combine diced avocado, tomato, red onion, lime juice, salt, and pepper. Mix well to combine.
- Once the chickpea burgers are cooked through, remove them from the grill and let them rest for a few minutes.
- Serve the grilled chickpea burgers on buns of your choice, topped with avocado salsa.
