Grilled Vegan Chickpea Burgers with Avocado Salsa

Ingredients:

For the Vegan Chickpea Burgers:
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup rolled oats
  • 1/4 cup chopped fresh parsley
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tablespoon ground flaxseed mixed with 3 tablespoons water (as a binder)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Olive oil for grilling
For the Avocado Salsa:
  • 1 ripe avocado, diced
  • 1 small tomato, diced
  • 1/4 cup diced red onion
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a food processor, combine chickpeas, rolled oats, parsley, red onion, garlic, ground flaxseed mixture, cumin, paprika, salt, and pepper. Pulse until well combined but still slightly chunky.
  3. Divide the chickpea mixture into 4 equal portions and shape each portion into a patty.
  4. Lightly brush each chickpea patty with olive oil.
  5. Place the patties on the grill and cook for about 5-6 minutes on each side, or until golden brown and grill marks appear.
  6. While the patties are grilling, prepare the avocado salsa. In a bowl, combine diced avocado, tomato, red onion, lime juice, salt, and pepper. Mix well to combine.
  7. Once the chickpea burgers are cooked through, remove them from the grill and let them rest for a few minutes.
  8. Serve the grilled chickpea burgers on buns of your choice, topped with avocado salsa.
