Ingredients (Serves 4–6)

For the Slaw

  • Green cabbage, finely shredded
  • Carrots, julienned or grated
  • Broccoli florets, finely chopped or shredded
  • Fresh parsley, finely chopped
  • Green onions, thinly sliced

For the Creamy Lemon–Tahini Dressing

  • Tahini (well-stirred)
  • Fresh lemon juice
  • Lemon zest
  • Extra virgin olive oil
  • Garlic, finely minced or grated
  • Maple syrup or honey (optional, for balance)
  • Salt, to taste
  • Black pepper, to taste
  • Cold water, as needed to thin the dressing

Step-by-Step Instructions

1. Prepare the Vegetables

Begin by washing all vegetables thoroughly under cold running water. Pat them dry using a clean kitchen towel or paper towels. Finely shred the cabbage using a sharp knife or mandoline for even texture and easier mixing.

2. Cut for Consistency

Slice the carrots into thin matchsticks or grate them coarsely. Chop the broccoli florets into very small pieces so they blend well into the slaw and absorb the dressing evenly.

3. Combine the Slaw Base

In a large mixing bowl, add the shredded cabbage, carrots, broccoli, parsley, and green onions. Toss gently to distribute all ingredients evenly.

4. Start the Dressing

In a separate bowl, add the tahini and fresh lemon juice. Whisk vigorously—this step is important because tahini thickens when lemon juice is added.

5. Build Flavor Gradually

Add lemon zest, olive oil, garlic, salt, and black pepper. Continue whisking until smooth. The mixture may look thick at this stage, which is completely normal.

6. Adjust the Texture

Slowly add cold water, one tablespoon at a time, whisking constantly until the dressing becomes creamy, smooth, and pourable.

7. Balance the Taste

Taste the dressing and adjust seasoning. Add maple syrup or honey if you prefer a slightly sweeter, more balanced flavor.

8. Dress the Slaw

Pour the dressing over the vegetable mixture. Use tongs or a large spoon to toss until all vegetables are evenly coated.

9. Rest for Best Flavor

Allow the slaw to rest for 10–15 minutes before serving. This helps the vegetables soften slightly and absorb the dressing.

Serving Suggestions

This Mediterranean Garden Slaw pairs wonderfully with grilled meats, roasted vegetables, or seafood. It also works as a filling for wraps and pita pockets or as a topping for grain bowls made with quinoa or farro.
