Ingredients

  • Large bunch of spring onions
  • Approx 100g flour
  • 35g cornflour
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cilantro
  • 250 milliliters cold beer
  • Vegetable oil for shallow frying

Method

  1. Prepare the Onions:
    • Trim the ends of the spring onions and cut them into thirds.
  2. Make the Batter:
    • In a bowl, mix together the flour, cornflour, paprika, chili powder, garlic powder, salt, black pepper, and ground cilantro.
    • Whisk in the cold beer to form a medium-thin batter. Adjust with more or less beer as needed.
  3. Coat and Fry:
    • Immediately coat the spring onion pieces in the batter.
    • Fry in a pan of hot oil over medium-high heat. Note that the colder the batter, the crispier the spring onions will be.
    • Ensure not to overcrowd the pan, as this will lower the temperature of the oil.
    • Fry for a couple of minutes until golden brown, then remove from the oil and drain on kitchen roll.
  4. Serve:
    • Serve with flaky salt and ground chili for a slight kick.
    • Enjoy with a nice cold beer.
