Ingredients
- Large bunch of spring onions
- Approx 100g flour
- 35g cornflour
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon ground cilantro
- 250 milliliters cold beer
- Vegetable oil for shallow frying
Method
- Prepare the Onions:
- Trim the ends of the spring onions and cut them into thirds.
- Make the Batter:
- In a bowl, mix together the flour, cornflour, paprika, chili powder, garlic powder, salt, black pepper, and ground cilantro.
- Whisk in the cold beer to form a medium-thin batter. Adjust with more or less beer as needed.
- Coat and Fry:
- Immediately coat the spring onion pieces in the batter.
- Fry in a pan of hot oil over medium-high heat. Note that the colder the batter, the crispier the spring onions will be.
- Ensure not to overcrowd the pan, as this will lower the temperature of the oil.
- Fry for a couple of minutes until golden brown, then remove from the oil and drain on kitchen roll.
- Serve:
- Serve with flaky salt and ground chili for a slight kick.
- Enjoy with a nice cold beer.
