Delicious Broccoli Cheddar Fritter Recipe
Ingredients:

2 cups broccoli florets (fresh or frozen, thawed and drained)
1 cup shredded cheddar cheese
2 large eggs
1/2 cup all-purpose flour
1/4 cup breadcrumbs
2 cloves garlic, minced
1/4 cup chopped green onions
1/4 teaspoon salt
1/4 teaspoon black pepper
Olive oil or vegetable oil for frying

Instructions:

Prepare the Broccoli:
If using fresh broccoli, steam or blanch it until tender, then finely chop. If using frozen broccoli, thaw and drain it well, then finely chop.
Make the Fritter Batter:
In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, minced garlic, and chopped green onions.
Add the flour, breadcrumbs, salt, and pepper. Mix well to combine.
Beat the eggs in a small bowl, then pour them into the broccoli mixture. Stir until everything is well combined and the mixture holds together.
Form the Fritters:
Scoop out about 2 tablespoons of the mixture and shape it into a small patty. Repeat with the remaining mixture.


Cook the Fritters:
Heat a few tablespoons of oil in a large skillet over medium heat.
Add the fritters to the skillet in batches, being careful not to overcrowd the pan.
Cook for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as necessary to avoid burning the fritters.
Transfer the cooked fritters to a paper towel-lined plate to drain excess oil.
Serve:
Serve the fritters warm, with your favorite dipping sauce if desired.
