Crispy Pumpkin Croquette

This vegan delight features tender kabocha squash seasoned to perfection, coated in crispy panko breadcrumbs, and served with a delightful tonkatsu sauce. Ingredients

For Pumpkin Croquettes
  • 1.5 cups kabocha squash, cubed
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
For Frying
  • 1/2 cup corn starch
  • 1/2 cup plant milk
  • 1 cup panko breadcrumbs
For Tonkatsu Sauce
  • 1 tbsp ketchup
  • 2 tsp vegan Worcestershire sauce
  • 2 tsp soy sauce
  • 1 tsp date syrup
  • Splash of water to dilute

Instructions

1. Prepare Pumpkin
  • Microwave the cubed kabocha squash for 3 minutes on high with a lid until soft. Alternatively, you can steam it.
  • Combine the cooked pumpkin with salt, black pepper, nutritional yeast, onion powder, and garlic powder. Refrigerate for about 30 minutes.
2. Prepare Frying Ingredients
  • In three separate bowls, arrange the ingredients needed for frying in this order: corn starch, plant milk, and panko breadcrumbs.
  • If making onigirazu, cook sushi rice and prepare other ingredients like sesame crusted tofu, thinly shaved cucumbers, and avocado.
3. Make Tonkatsu Sauce
  • In a small bowl, mix ketchup, vegan Worcestershire sauce, soy sauce, date syrup, and a splash of water to dilute. Set aside.
4. Form Croquettes
  • Take the pumpkin mixture out of the fridge and roll it into patties with your hands.
  • Coat each patty evenly in corn starch, followed by plant milk, and lastly, panko breadcrumbs.
5. Fry Croquettes
  • Heat up some oil in a pan. Shallow or deep fry the coated pumpkin patties until golden brown and crispy.
6. Assemble Onigirazu
  • If making onigirazu, use the tortilla wrap hack (as shown in the video) to assemble the pumpkin croquettes with sushi rice and other desired ingredients.

Notes

  • This recipe yields about 5 pumpkin croquettes, each approximately 1-2cm in thickness.
