Step-by-Step Preparation

1. Prepare the Zucchini

Grate the zucchini finely using a box grater. Transfer it to a clean kitchen towel and squeeze out as much moisture as possible. This step is essential for achieving a crisp texture.

2. Combine the Ingredients

In a large mixing bowl, combine ground chicken, grated zucchini, egg, Parmesan, garlic, parsley, onion powder, smoked paprika, salt, and pepper.

3. Add the Breadcrumbs

Stir in breadcrumbs to help bind the mixture. The mixture should be moist but hold its shape when formed.

4. Mix Gently

Mix until just combined. Overmixing can make the texture dense.

5. Shape the Bites

Using your hands or a scoop, form small patties or balls (about 2 tablespoons each). Place them on a plate or tray.

6. Heat the Pan

Heat olive oil in a large non-stick skillet over medium heat until warm.

7. Cook Until Golden

Place the bites in the skillet without overcrowding. Cook for 4–5 minutes on one side until golden brown.

8. Flip and Finish Cooking

Turn carefully and cook another 4–5 minutes, ensuring the internal temperature reaches 165°F (74°C).

9. Rest Before Serving

Allow the bites to rest for a few minutes to retain juiciness.

10. Prepare the Dip

In a small bowl, mix Greek yogurt, lemon juice, herbs, garlic, salt, and pepper. Chill until serving.

Alternative Cooking Methods

Oven Method

Preheat oven to 400°F (200°C). Place bites on a parchment-lined baking sheet and bake for 18–22 minutes, flipping halfway through.

Air Fryer Method

Cook at 375°F (190°C) for 12–15 minutes, flipping halfway for even browning.

Both methods offer excellent results and reduce the need for added oil.
