Ingredients
- 2 medium zucchinis, cut into sticks (about 3-4 inches long)
- 1/2 cup all-purpose flour (or almond flour for a low-carb option)
- 2 large eggs, beaten
- 1 cup panko breadcrumbs (or crushed pork rinds for keto-friendly)
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Cooking spray
Instructions
- Prepare the Zucchini
Wash and dry the zucchinis. Cut off both ends, then slice each zucchini into sticks about 1/2 inch thick and 3-4 inches long, resembling fries. - Set Up Your Dredging Station
- Place flour in one shallow bowl.
- In a second bowl, beat the eggs until smooth.
- In a third bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Coat the Zucchini
- Start by dredging each zucchini stick in the flour, shaking off any excess.
- Dip it into the beaten eggs, ensuring it’s well-coated.
- Finally, press it into the breadcrumb mixture, ensuring an even coating. Repeat until all zucchini sticks are coated.
- Preheat the Air Fryer
Preheat your air fryer to 400°F (200°C) for about 3-5 minutes. Lightly spray the air fryer basket with cooking spray. - Air Fry the Zucchini
- Arrange the zucchini sticks in a single layer in the air fryer basket. Be sure not to overcrowd them; work in batches if necessary.
- Spray the tops of the zucchini sticks lightly with cooking spray to help them crisp up.
- Cook
Air fry for 8-10 minutes, or until golden and crispy. Flip halfway through cooking for even browning. - Serve
Once cooked, remove the zucchini fries from the air fryer and garnish with fresh chopped parsley. Serve immediately with marinara sauce, ranch dressing, or your favorite dipping sauce.
Tips:
- For extra crispiness, use panko breadcrumbs instead of regular breadcrumbs.
- To make this recipe gluten-free, substitute all-purpose flour with almond flour and panko breadcrumbs with crushed gluten-free crackers or pork rinds.
- Avoid salting the zucchini beforehand, as this can make them too watery and affect crispiness.
These zucchini fries offer a delightful crunch and are a healthier snack option, all thanks to the air fryer! Enjoy your crispy, savory bites without the guilt.
