Crispy Air Fryer Zucchini Fries

These Air Fryer Zucchini Fries are crunchy, flavorful, and a healthier alternative to traditional fries! Coated in a seasoned panko-parmesan crust, they’re air-fried to perfection, making them ideal as a snack, appetizer, or side dish.

Ingredients

  • 2 medium zucchinis, cut into sticks (about 3-4 inches long)
  • 1/2 cup all-purpose flour (or almond flour for a low-carb option)
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs (or crushed pork rinds for keto-friendly)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Cooking spray

Instructions

  1. Prepare the Zucchini
Wash and dry the zucchinis. Cut off both ends, then slice each zucchini into sticks about 1/2 inch thick and 3-4 inches long, resembling fries.
  2. Set Up Your Dredging Station
    • Place flour in one shallow bowl.
    • In a second bowl, beat the eggs until smooth.
    • In a third bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. Coat the Zucchini
    • Start by dredging each zucchini stick in the flour, shaking off any excess.
    • Dip it into the beaten eggs, ensuring it’s well-coated.
    • Finally, press it into the breadcrumb mixture, ensuring an even coating. Repeat until all zucchini sticks are coated.
  4. Preheat the Air Fryer
Preheat your air fryer to 400°F (200°C) for about 3-5 minutes. Lightly spray the air fryer basket with cooking spray.
  5. Air Fry the Zucchini
    • Arrange the zucchini sticks in a single layer in the air fryer basket. Be sure not to overcrowd them; work in batches if necessary.
    • Spray the tops of the zucchini sticks lightly with cooking spray to help them crisp up.
  6. Cook
Air fry for 8-10 minutes, or until golden and crispy. Flip halfway through cooking for even browning.
  7. Serve
Once cooked, remove the zucchini fries from the air fryer and garnish with fresh chopped parsley. Serve immediately with marinara sauce, ranch dressing, or your favorite dipping sauce.

Tips:

  • For extra crispiness, use panko breadcrumbs instead of regular breadcrumbs.
  • To make this recipe gluten-free, substitute all-purpose flour with almond flour and panko breadcrumbs with crushed gluten-free crackers or pork rinds.
  • Avoid salting the zucchini beforehand, as this can make them too watery and affect crispiness.

These zucchini fries offer a delightful crunch and are a healthier snack option, all thanks to the air fryer! Enjoy your crispy, savory bites without the guilt.
