1/2 small yellow or red onion, chopped
2 cloves of garlic, crushed
2 chipotle peppers with adobo sauce, minced, or 1 tablespoon chipotle hot sauce
1 teaspoon of thyme
1/2 teaspoon ground cumin
1/2 cup canned crushed tomatoes or 2 ripe Roma tomatoes, finely chopped
1/2 cup water
1/2 cube vegan chicken bouillon or 1/2 teaspoon vegetable or vegan chicken broth paste
1.15-ounce can chickpeas, rinsed and drained
10 yellow cornbread
salt to taste
