Creamy Lemon Squares Recipe
Ingredients:
For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the lemon filling:
- 1 (14-ounce) can sweetened condensed milk
- 4 egg yolks
- 2/3 cup freshly squeezed lemon juice (about 4-5 lemons)
- 1 tablespoon lemon zest
For the creamy topping:
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Pan:
- Preheat your oven to 350°F (175°C).
- Grease an 8×8-inch baking dish and line it with parchment paper, leaving an overhang on the sides for easy removal.
- Prepare the Crust:
- In a medium bowl, combine the graham cracker crumbs and granulated sugar.
- Add the melted butter and stir until the crumbs are well-coated and resemble wet sand.
- Press the mixture firmly into the prepared baking dish to form an even layer.
- Bake the crust in the preheated oven for about 10 minutes, or until lightly browned. Remove from the oven and let cool slightly.
- Prepare the Lemon Filling:
- In a large bowl, whisk together the sweetened condensed milk, egg yolks, lemon juice, and lemon zest until smooth and well combined.
- Pour the lemon filling over the pre-baked crust, spreading it out evenly.
- Bake the Lemon Squares:
- Return the baking dish to the oven and bake for 15-20 minutes, until the filling is set and slightly firm to the touch.
- Remove from the oven and let cool to room temperature. Then, refrigerate for at least 2 hours until completely cooled and set.
- Prepare the Creamy Topping:
- In a medium bowl, beat the heavy cream with an electric mixer until it begins to thicken.
- Add the powdered sugar and vanilla extract, and continue to beat until stiff peaks form.
- Assemble and Serve:
- Once the lemon squares are fully set, spread the whipped cream topping evenly over the top.
- Use the parchment paper overhang to lift the lemon squares out of the baking dish.
- Cut into squares and serve chilled.
Tips:
- Lemon Zest: Make sure to zest the lemons before juicing them for the best results.
- Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
- Garnish: For an extra touch, garnish the lemon squares with a sprinkle of additional lemon zest or a few fresh berries before serving.
Enjoy your creamy, tangy, and delicious lemon squares!
