Creamy Lemon Squares Recipe
Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the lemon filling:

  • 1 (14-ounce) can sweetened condensed milk
  • 4 egg yolks
  • 2/3 cup freshly squeezed lemon juice (about 4-5 lemons)
  • 1 tablespoon lemon zest

For the creamy topping:

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease an 8×8-inch baking dish and line it with parchment paper, leaving an overhang on the sides for easy removal.
  2. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs and granulated sugar.
    • Add the melted butter and stir until the crumbs are well-coated and resemble wet sand.
    • Press the mixture firmly into the prepared baking dish to form an even layer.
    • Bake the crust in the preheated oven for about 10 minutes, or until lightly browned. Remove from the oven and let cool slightly.
  3. Prepare the Lemon Filling:
    • In a large bowl, whisk together the sweetened condensed milk, egg yolks, lemon juice, and lemon zest until smooth and well combined.
    • Pour the lemon filling over the pre-baked crust, spreading it out evenly.
  4. Bake the Lemon Squares:
    • Return the baking dish to the oven and bake for 15-20 minutes, until the filling is set and slightly firm to the touch.
    • Remove from the oven and let cool to room temperature. Then, refrigerate for at least 2 hours until completely cooled and set.
  5. Prepare the Creamy Topping:
    • In a medium bowl, beat the heavy cream with an electric mixer until it begins to thicken.
    • Add the powdered sugar and vanilla extract, and continue to beat until stiff peaks form.
  6. Assemble and Serve:
    • Once the lemon squares are fully set, spread the whipped cream topping evenly over the top.
    • Use the parchment paper overhang to lift the lemon squares out of the baking dish.
    • Cut into squares and serve chilled.

Tips:

  • Lemon Zest: Make sure to zest the lemons before juicing them for the best results.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • Garnish: For an extra touch, garnish the lemon squares with a sprinkle of additional lemon zest or a few fresh berries before serving.
