Ingredients
4 large ribs celery, sliced
4 large carrots, sliced
1 medium onion, diced
1 Tbsp minced garlic
1 medium zucchini, diced
2 tsp kosher salt
¼ tsp black pepper
1 Tbsp Italian seasoning
1 (14 oz.) can canned diced tomatoes
1 (6 oz.) can tomato paste
1 cup green beans, canned and drained, then cut into 1-inch pieces
6 cups vegetable broth
1 ( 16 oz.) can cannellini beans, canned, rinsed and drained
1 (16 oz.) can red kidney beans , canned rinsed and drained
1/2 cup dry small or medium shell pasta or whole grain small pasta
2 cups fresh spinach, torn
1 Tbsp parsley, minced
Instructions
Spray a large pot or Dutch oven with non stick cooking spray. Heat over medium-high. Add onion, celery, carrots, zucchini and garlic cook until tender, 3-5 minutes.
Stir in tomato paste, then add tomatoes, broth, and Italian seasoning. Bring to a simmer.


Add white beans, kidney beans, green beans, and pasta. Simmer until pasta is al dente, 10-12 minutes.
Season to taste with salt and pepper. Stir in spinach leaves and let cook until spinach is wilted.
Garnish with fresh parsley and serve.

Can this be made in the slow cooker?

Yes! This soup can be made in the slow cooker if you’d prefer to do that instead. You can add all the ingredients to the slow cooker minus the pasta, spinach and parsley, then let everything simmer for 4-6 hours on low or 2-3 hours on high. Stir in the pasta and spinach and let it cook for an additional 20-25 minutes, or until pasta is tender. Garnish with parsley and serve!
