  • 1 medium red onion, chopped
  • 2-3 gherkins, chopped
  • 100 ml tomato passata
  • 1 tablespoon vegan mayonnaise or soy yogurt
  • Salt, pepper, and paprika to taste
  • Lemon wedges
  • Mixed salad greens

Instructions:

  1. Lightly smash the rinsed chickpeas with a fork or potato masher.
  2. Add the chopped red onion and gherkins to the chickpeas.
  3. Mix in the tomato passata.
  4. Stir in the vegan mayonnaise or soy yogurt until well combined.
  5. Season with salt, pepper, and paprika to taste.
  6. Serve with lemon wedges on the side and a bowl of mixed salad greens.
