  • Chopped red onion, to taste
  • Salt, to taste
  • Black pepper, to taste

For the Chaffles:

  • 1 egg
  • 1/2 cup shredded mozzarella cheese
  • 1 heaping tablespoon almond flour
  • Cracked black pepper, to taste
  • Garlic powder, to taste
  • Onion powder, to taste
  • Everything but the Bagel seasoning, to taste
  • 2 heaping tablespoons shredded cheddar cheese (for crisping the chaffles)

Instructions:

  1. Begin by preparing the chicken salad. In a mixing bowl, combine the drained canned chicken breast with a dollop of yellow mustard and enough mayonnaise to achieve your desired consistency. Add chopped red onion to taste, then season generously with salt, black pepper, garlic powder, onion powder, smoked paprika, spicy garlic seasoning sprouts, dried parsley, and herbs de Provence. Mix well until all ingredients are evenly incorporated. Adjust seasoning to taste, if necessary.
  2. Preheat your mini waffle maker while you prepare the chaffle batter.
  3. In a separate bowl, whisk together the egg, shredded mozzarella cheese, almond flour, cracked black pepper, garlic powder, onion powder, and everything but the Bagel seasoning until well combined.
  4. Once the waffle maker is hot, sprinkle half of the shredded cheddar cheese directly onto the bottom plate of the waffle maker. This will create a crispy outer layer for the chaffles.
  5. Spoon half of the chaffle batter onto the shredded cheddar cheese in the waffle maker. Close the lid and cook until golden brown and crispy, following the manufacturer’s instructions for your specific waffle maker. Repeat with the remaining batter to make two chaffles.
  6. Once the chaffles are cooked, assemble your sandwich by placing a generous portion of the prepared chicken salad between the two chaffles.
  7. Add any additional fixings you like to customize your sandwich, such as lettuce, tomato, avocado, or extra cheese.
  8. Serve your Chicken Salad Chaffle Sandwich immediately and enjoy the delicious combination of flavors and textures.

Chicken salad chaffle sandwich
I make the chicken salad using the canned chicken breast from Costco. Drain the chicken and add it to a bowl with a LITTLE yellow mustard and enough mayo to get it to the consistency you like. Mix in some chopped red onion and season it well. I season the chicken with salt, black pepper, garlic powder, onion powder, smoked paprika, spicy garlic seasoning sprouts, dried parsley, and a little herbs de Provence.
Everything Chaffle ingredients:
• 1 egg
• 1/2 cup shredded mozzarella cheese
• 1 heaping Tbsp almond flour
• cracked black pepper
• garlic powder
• onion powder
• everything but the bagel seasoning
• 2 heaping Tbsp shredded cheddar cheese (to place directly on the mini waffle maker). This will make the chaffle crispy on the outside.
This mixture will make two mini chaffles.
Add the fixings you like to the sandwich and enjoy!
