Chicken Parm

Ingredients:

4 boneless, skinless chicken breasts
Salt and pepper to taste
1 cup whole wheat breadcrumbs
1/2 cup grated Parmesan cheese
2 large eggs, beaten
1 cup marinara sauce (look for a low-point option)

1 cup part-skim mozzarella cheese, shredded
Fresh basil for garnish (optional)
Instructions:

Preheat your oven to 400°F (200°C).
Season chicken breasts with salt and pepper.
In one shallow bowl, combine breadcrumbs and Parmesan cheese. In another bowl, place beaten eggs.
Dip each chicken breast into the beaten eggs, then into the breadcrumb mixture, making sure to coat the chicken evenly.
Place the coated chicken breasts on a baking sheet lined with parchment paper.
Bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through and the coating is golden brown.
Remove the chicken from the oven and spoon marinara sauce over each breast.
Sprinkle mozzarella cheese over the top.
Return the chicken to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Garnish with fresh basil if desired.
