Chicken Pad Thai (Weight Watchers Version)
Ingredients:
- 1 lb whole wheat linguine
- Cooking spray
- 4 eggs
- 1 cup chicken broth (or 1 cup water + 1 chicken bouillon cube)
- 2 tsp ground ginger
- 6 tbsp soy sauce
- 8 tbsp PB2 (powdered peanut butter)
- 4 tbsp water
- 4 tbsp honey
- 4 tsp garlic chili sauce
- 1 tsp minced garlic
- 1 tbsp lime juice
- 1 tbsp sesame oil
- 1 1/2 lbs boneless, skinless chicken breast (cut into bite-size pieces)
- 2 cans bean sprouts (drained)
- 4-5 green onions (cut stems into ½ inch pieces, slice whites)
- ½ cup cilantro leaves
- Chopped peanuts (8g per serving)
Instructions:
- Cook the Pasta:
- Cook the whole wheat linguine according to the package directions. Drain and set aside.
- Scramble the Eggs:
- Spray a large skillet with cooking spray and scramble the eggs. Once done, transfer the scrambled eggs to a bowl and set aside.
- Prepare the Sauce:
- In the same skillet, combine the chicken broth (or water and bouillon), ground ginger, soy sauce, PB2, water, honey, garlic chili sauce, minced garlic, lime juice, and sesame oil. Bring the mixture to a boil.
- Return the drained pasta to its cooking pot, and pour the sauce over the pasta. Toss to coat the pasta evenly.
- Cook the Chicken:
- Using the same skillet (no need to clean), cook the chicken pieces over medium heat until fully cooked.
- Combine Everything:
- Add the cooked chicken and drained bean sprouts to the pasta mixture. Toss to combine.
- Stir in the green onions, cilantro, and scrambled eggs.
- Serve:
- Portion out the pad thai into 9 servings (about 2 cups per serving).
- Top each serving with 8g of chopped peanuts.
