Chicken and Dumpling Soup

Ingredients:

For the Soup:

  • 2 tablespoons olive oil
  • 1 large onion, chopped

Instructions:

  1. Sauté Vegetables:
    • In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another 1-2 minutes.
  2. Add Carrots and Celery:
    • Stir in sliced carrots and celery. Cook for about 5 minutes.

  4. Add Chicken:
    • Stir in shredded cooked chicken. Simmer for 15-20 minutes.

    • In a medium bowl, whisk together flour, baking powder, salt, and dried parsley. Stir in milk and melted butter until just combined.
  6. Add Peas and Cook Dumplings:
    • Stir in frozen peas. Drop spoonfuls of dumpling batter onto the soup’s surface. Cover and cook for 10-12 minutes.
  7. Serve:
    • Remove bay leaf. Ladle soup into bowls, ensuring each has a few dumplings. Garnish with parsley if desired. Serve hot.
