Cheesy Pocket Tacos

  • Weight Watchers Low-Point Cheesy Pocket Tacos
    Prep time: 15 mins
    Cook time: 15-20 mins
    Servings: 12 pockets

    Ingredients
Protein: 1 lb extra-lean ground beef (96/4) or ground turkey breast (0 points on most plans).
The “Pocket”: 6 Flatout Light original wraps (cut in half) or Tumaro’s Low-Carb wraps.
Cheesy Filling:3/4 cup reduced-fat shredded Mexican cheese blend.
1/2 cup fat-free Greek yogurt (used as a 0-point sub for cream cheese or sour cream).
    1/2 cup chunky salsa.
Seasoning: 1 packet low-sodium taco seasoning.
Extras: Diced bell peppers, onions, and shredded lettuce (all 0 points).

    Instructions
Brown the Meat: In a large skillet sprayed with non-stick spray, brown the meat with diced onions and peppers. Drain any excess fat.
Season: Add the taco seasoning and a splash of water. Simmer for 5 minutes until thickened.
Prepare the Pockets: Cut your light wraps in half. In the center of each half, spread a small amount of fat-free Greek yogurt and salsa.
Assemble: Add a few spoonfuls of the meat mixture and a sprinkle of reduced-fat cheese.
Fold and Seal: Fold the sides of the wrap over the filling to create a rectangular pocket. To seal, you can use a small amount of “flour paste” (flour and water mixed) or simply place them seam-side down on a baking sheet.
Bake: Instead of brushing with melted butter, lightly spray the tops with cooking spray. Bake at 375°F for 10–12 minutes until golden and crispy.

    Point-Saving Tips
Tortilla Choice: Using “Carb Balance” or “Light” wraps significantly reduces points compared to standard flour tortillas.
Cheese: Stick to reduced-fat or fat-free shredded cheeses to keep the “cheesy” factor without the high saturated fat points.
Zero-Point Toppings: Load your pockets with fresh cilantro, diced tomatoes, radishes, and jalapeños to add volume and flavor for 0 points.
