Ingredients:-
- 1 pound ground chicken
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning (or a mix of dried basil, oregano, and thyme)
- Salt and pepper to taste
- 1-2 tablespoons olive oil (for frying)
Instructions:-
- In a large mixing bowl, combine the ground chicken, shredded mozzarella, grated Parmesan, almond flour, minced garlic, Italian seasoning, salt, and pepper. Mix everything together until well combined.
- Heat olive oil in a skillet over medium heat.
- Take a portion of the chicken mixture and form it into a small patty or fritter shape. Repeat with the remaining mixture, forming fritters of similar size.
- Place the fritters in the heated skillet. Cook them for about 4-5 minutes on each side, or until they are golden brown and cooked through. Make sure to cook them thoroughly as they contain chicken.
- Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.
- Serve the cheesy keto chicken fritters while they’re hot. They can be enjoyed on their own as a snack, paired with a dipping sauce, or served alongside a salad or your favorite low-carb side dish….
