Ingredients
2-3 TBSP crumbled cooked bacon or veggie bacon bits
30 frozen phyllo shells (two 15-count packages)
4 oz cream cheese
2 TBSP mayo
1 cup grated sharp cheddar cheese
1 jalapeño pepper
3 TBSP jarred diced jalapeño
⅛ tsp garlic powder
⅛ tsp salt
Instructions
Jalapeños Note: I use both diced jarred jalapeños for their pickled, nacho-topping flavor, and fresh minced jalapeños. Feel free to use one type only, but a combination of both offers a delightful popper experience.Preheat your oven to 375°F.Prepare the phyllo shells on a baking sheet and set aside.Soften the cream cheese to room temperature or lightly warm in the microwave for 15-20 seconds. Combine with the grated cheddar cheese and mayo, mixing thoroughly.Prepare the Jalapeño: Remove the stem and seeds from the jalapeño (keep the seeds if you prefer a spicier taste) and mince finely.Combine the fresh and jarred jalapeños with the cheese mixture. Season with garlic powder and salt. Mix well. Optionally, add crushed red pepper flakes or cayenne pepper for extra heat.Fill the phyllo shells with the mixture and top with crumbled bacon or veggie bacon bits. You can omit the bacon for a still delicious alternative.Bake for 10-15 minutes at 375°F, or until the phyllo is crispy and the filling is hot and melty. Enjoy!
