Cheesy Bacon Stuffed Zucchini
2 medium zucchini
4 oz cream cheese
1/2 shredded mozzarella
1/4 shredded cheddar
1 jalapeño diced 3 slices bacon, chopped
Pinch of salt & dash of garlic powder
Preheat oven to 450°
Slice zucchini is 1/4” slices but don’t cut all the way through!
Bake zucchini for 10 min
Prep your cheese filling by combining all the cheeses, bacon, jalapeño and spices.
Fill in each section with the cheese mixture and bake another 8-9 min!
